Ingredients
- (6 cups) Hearty Beef Stock (Pint)
- (2 pounds) Beef: Stew Meat
- (3 Tablespoons) All-purpose flour
- (1/2 teaspoon) Garlic Powder
- (1/2 teaspoon) Sea Salt
- (1/2 teaspoon) Black Pepper
- (3 Tablespoons) Olive Oil, Lard, or Butter
- (1 medium, diced) Onion
- (1 pound, cubed) Potatoes
- (4, cut into 1 inch pieces) Carrots
- (4 ribs, cut into 1 inch pieces) Celery
- (3 tablespoons) Tomato Paste
- (1 teaspoon) Rosemary
- (4 Tablespoons or as needed) Cornstarch
- (4 Tablespoons or as needed) Water
- (1 can) Peas
Directions
1) In a container combine flour, garlic powder, sea salt, and pepper. Toss cubed beef in the flour mixture until well coated.
2) Heat fat of your choice (butter, olive oil, lard) in a large Dutch oven. Add the onions and beef and cook until browned.
3) Add in the beef broth.
4) Stir in remaining ingredients except for the cornstarch, water, and peas. Cover with lid and simmer on medium low heat 1 hour to an hour and a half until beef becomes tender.
5) In a small dish, add cornstarch and water and mix until combined. Slowly add the mixture to the stew until your desired consistency is reached (you may need all of this mixture if you like a thick stew. Additional mixture may be required until your liking).
6) Stir in peas and simmer for 5 minutes before serving.
