A whole beef is ideal for larger families, those with ample freezer space, or anyone looking for the greatest value per pound.

Because you're purchasing the entire animal, you'll receive the widest variety of cuts and maximize flexibility when deciding how your beef is processed and packaged.

Buying in Bulk Saves Money

Many of our premium steaks sell individually for $28–48 per pound, but when you purchase a whole beef, your average price across every cut—from premium steaks to flavorful ground beef—is just $6.90 per pound, before processing.

While you'll receive a mix of premium steaks, roasts, ground beef, brisket, soup bones, and many other cuts, purchasing in bulk allows you to enjoy exceptional 100% grass-fed beef at a significantly lower average cost than buying individual cuts throughout the year.

For families who regularly enjoy beef, purchasing a whole animal is often the most economical way to fill a freezer with premium, locally raised beef.

What Does "Hanging Weight" Mean?

Bulk beef is priced using the hanging weight.

After harvest, the hide, head, organs, and other inedible portions are removed. The remaining carcass is weighed before it is aged and cut into the individual packages you select.

Your packaged beef will weigh less than the hanging weight because moisture is naturally lost during the aging process, bones are removed from many cuts, excess fat is trimmed, and the meat is cut and packaged according to your preferences.

Most customers receive approximately 60–65% of the hanging weight as packaged beef, although this varies depending on your cutting instructions and whether you choose bone-in or boneless cuts.

Estimated Cost

Every animal is unique, so your final cost will depend on its actual hanging weight. Based on the cattle we currently have scheduled for harvest, we expect upcoming whole beefs to have hanging weights in the 800–900 pound range.

The exact quantities will vary based on the size of the animal and the cutting instructions you choose.

Customize Your Order

One of the greatest benefits of purchasing a whole beef is that you decide exactly how it's processed.

You'll work directly with the butcher to choose options such as:

  • Steak thickness
  • Number of steaks per package
  • Roast sizes
  • Ground beef package size
  • Bone-in or boneless cuts
  • Organ meats
  • Soup bones
  • Fat for rendering into tallow
  • Aging time (14-day standard or optional 21-day dry age)

Processing & Pickup

Your whole beef will be custom processed by Eureka Locker, a USDA-inspected processing facility located in Eureka, Illinois.

After we deliver your animal to the processor, Eureka Locker will contact you directly to discuss your cutting instructions, including your preferred aging time, and answer any processing-related questions.

Once processing is complete, you will pick up your finished beef directly from Eureka Locker.

Please note that processing fees charged by Eureka Locker are separate from the price of your beef and are paid directly to the processor at the time of pickup.

How Much Freezer Space Will I Need?

A whole beef typically requires approximately 20 cubic feet of freezer space.

If your freezer already contains other food, you may want additional space available before pickup.
